Recipe for roasted milk

Roasted milk is a very popular dessert in Latin America. The version that I share with RecetasGratis is the one we make in Peru and it is the one that brings back memories of when I was a child. Peruvian roasted milk, unlike similar desserts such as flan or flipped cream, does not have caramel and does not come out of the mould. It is eaten in the same mould where it is baked and its characteristic is that it has a layer of burnt milk on the surface. So here I leave you the recipe for roasted milk in a double boiler step by step. Enjoy!

Ingredients to make Roasted milk in a water bath:

 500 millilitres of fresh whole milk

 100 grams of granulated white sugar

 1 teaspoon vanilla extract

 3 units of Eggs

 1 unit of Egg yolk

 1 pinch of salt

How to make roasted milk in a bain-marie:

The first step in making this bain-marie roasted milk is to preheat the oven to 170 ° C.

Then put the milk, sugar and vanilla in a pot and heat over medium heat, it should not boil.

Trick: What we achieve with this is that the sugar grains melt.

Besides, beat the eggs with the yolk and salt.

Add the eggs to the milk and let it boil, stirring constantly to prevent the eggs from cooking and the Peruvian roasted milk does not suit us well.

On the other hand, prepare a glass dish measuring 26 cm x 17 cm where we will make the bain-marie from the oven-roasted milk. Cover the base with a folded piece of parchment paper, this will prevent the water from bubbling and the drops will fall into the moulds.

Tip: You can use a larger pan to fit more moulds.

Strain the preparation of the Peru-style roasted milk once it is removed from the heat. Then, pour it into the moulds or ramekins that we want. Place the ramekins on the source and bring the roasted milk to the oven.

Once in the oven, carefully add hot water to the source until it reaches half the height of the moulds. Bake for 1 hour and 15 minutes or until a stick inserted comes out clean.
