2 units of chicken or hen breast
3 cups of water (720 milliliters)
½ unit of sliced bread
1 jar of evaporated milk
1 teaspoon minced garlic
½ teaspoon of pepper
1 teaspoon salt

3 tablespoons of yellow ground chili
2 units of boiled eggs
4 units of yellow or white potatoes
How to make Peruvian Aji de Gallina:
Cook the chicken in boiling water. When it's ready, remove it and crumble it. Don't discard the leftover broth.
Tip: Remember that if you want to prepare the authentic Peruvian chicken chili recipe you should use chicken meat, although it is also very good with chicken.
Fill a cup with the leftover broth from the cooked chicken and soak in the crustless sliced bread.
While the broth is soaked, put in a saucepan or pan to fry onion. When you see that it becomes transparent, add the garlic, the ground pepper, the salt and the pepper.
You can make the homemade sliced bread recipe yourself if you want.
Stir everything and add the bread. What the bread will do is thicken the chicken chili sauce, so it is important not to skip this ingredient. Stir the mixture so it doesn't stick or burn.
Tip: If you want it to thicken even more, you can also add Parmesan cheese.
Little by little, add the rest of the broth that was left over from cooking the chicken until the bread is well cooked. Then add the chicken and evaporated milk and stir everything.
When ready, serve it on the plate and accompany it with a cooked potato and hard-boiled egg or white rice. If you wish, you can sprinkle a little chopped parsley or coriander over the Peruvian ají de gallina.
Other typical recipes of Peru are the famous fish ceviche and the strawberry ice cream cake. Don't stop trying them!
